Do you want to marry me? – Hive and Nest

You will when you taste this salsa!  It’s phenomenally out-of-this-world. If you plan on watching the Superbowl tomorrow, this would be perfect.  It would be perfect even if all you plan on doing is reading a book and eating in bed (that’s my favorite! Although I hate getting salsa on my sheets.)

This tastes best if it’s made the night before.  The recipe is large (4 cups or so) but people gobble it up like crazy.  Feel free to halve it if you’re eating it with only a few people. Those scoopy tortilla chips are perfect with this. (BTW this is head and shoulders above that avacado stuff made with Italian dressing mix. I like that a lot but this is better.)

1 small onion1 red bell pepper, seeds/veins removed (yellow is OK too, but green is lame)1 large handful cilantro4 cloves garlic, minced1 can black olives, drained1/3 cup olive oil1/4 cup lemon juice3 tablespoons cider vinegar1 teaspoon dried oregano1/2 teaspoon salt1/2 teaspoon ground black pepper1 (16 ounce) package frozen corn kernels, thawed

4 avocados – peeled, pitted and mashed
